As much as I love salads, I have to say my husband really “likes” them too. But I am always trying to think of ways to make it “man-i-fied.” I started eating Cold Beef Salad when I think I might have been 9 or 10. I guess you could call it Asian inspired, man inspired, but it’s simple, delicious, easy to make and covers the families nutritional needs (yes, I do aim to have nutrition too.) My husband and I enjoy this many times in the summer months, and we just inaugurated our first Cold Beef Salad of the season.
Did I say it was simple yet? It’s simple incase I didn’t stutter earlier. Oh yes- and this is a great carb friendly salad. Great on the Dukan Diet too! (*see below for notes on Dukan Diet)
Cold Beef Salad
Beef- a lot of varieties of beef can make this work but I usually buy London Broil or Tri-Tip. But don’t shy away from a sirloin or other lean cut of meat. The idea is to not break the bank here folks.
Head of Romaine Lettuce- No exception here.
1 small white onion, chopped
1 cucumber, sliced and then halved.
Sweet Chili Sauce (sold in the Asian food section at the grocery)
Seasonings for marinating your beef
To Start: Marinate meat in your favorite seasoning. If you lack inspiration from your spice rack go with the basic: Wortchshire sauce, garlic power, salt & pepper, seasoned salt, Tony’s. That ought to get you something scrumptious. Wash lettuce leaves and chop into 2 inchs lengths. This will serve as the beef’s wrapping (like a tortilla). Chop onion, slice cucmbers thin, then cut each slice in half. Cook meat on grill (we love a weber- gas or charcoal) to your satisfaction. But the longer you cook it, the longer you chew it! We prefer ours a medium rare. Slice meat, against the grain in thin, manageable pieces.
Here is the finished look of your preparation. We ate this at our coffee table. 
Sweet Chili Sauce. Gives it a little heat, with a lot of sweet! 
Place a piece of beef on lettuce bed. Top with cucumber slice, few sprinkles of onion and top with Sweet Chili Sauce.
Wrap that sucker up and eat it like a taco. You WILL eat more than you imagined but hey, it’s carb friendly too (whose counting?)!!
** Dukan Diet recommendation: Limit the sweet Chili sauce intake. You don’t have to go without completely (unless your strictly following the Dukan Diet.) Eat this Cold Beef Salad on a meat and veggie day!
